I have had a great response to my site. Thank you for all the nice comments!! I want to do a newsletter type of page, either monthly or bi-weekly, depending on input. Announcing new recipes, some menu plans, household tips, and some other features. Planned Over

A "planned over", is a great way for a busy cook to get a few easy meals out of one main dish. I do this all the time. I cook alot on the weekends, and many times I have enough "planned overs" for a weeks worth of meals!!

ROAST BEEF

To make...

First, a dinner of roast beef, carrots & potatos with gravy, which I usually serve with a salad and rolls...Second, beef and noodles, which I usually serve with green beans and rolls...Third, beef hash, which I usually serve with warm bread
You will need...

-4-6 lb beef roast (size depends on family size)
-a bag-n-season for beef stew, this makes a wonderful gravy
-1 bag of baby carrots
-about 10 med. red potatos, peeled and and cut into small chunks, divided
-1 onion, chopped
-1 pkg egg noodles
-beef broth, either canned, or made from bouillion
On Sunday, cook the roast in the bag with the carrots, half the potatos and onion, after the meal, dice the remaining roast, in one storage bowl combine the remaining carrots, potatos, and gravy with half the roast, in another storage bowl combine the remaining roast with the beef broth...Voila, you have two additional, quick meals waiting for you in the frig!! All you need to do is warm up the hash, for the first meal and cook the noodles in the beef broth, and make mashed potatos for the second meal...Of course these meals also freeze well.

  • Keep a terra cotta flowerpot near your sink to store steel wool pads in. The pot absorbs the moisture and keeps the pad rust free.
  • Light a candle near you next time your chopping an onion. The flame eliminates the gas the onion gives off that burns your eyes.
